Dear Carlo's Bakery,
Hi my name is Sienna Miley I am currently attending in Wood River High School in Hailey Idaho as a sophomore. Our school is converting to an international bacaloriat school with this new change each student is required to do a sophomore or personal project which is a huge project where each student pick their own interest and dose a project on it some examples include designing a dress, building a guitar, planning an invent and job shadowing. I love backing and for my personal project a want to job shadow a baker and how better than the Cake Boss himself.
About two years ago I became really interested in cooking and baking, since then I have cooked about two or more meal each night for my family and I bake like crazy so much so that I have to bring my creations to school my dad's work and lots of other places to get rid of them. I learn so much about baking from Buddy and the "crew" just by watching Cake Boss and I cannot even imagine how much I can learn from getting to job shadow one of them.
You are probably wondering where I am getting at with all this. I was wondering if Buddy or any other baker at Carlo's Bakery would give me the amazing opportunity as to job shadow them over spring break? I do understand if you are too busy but I believe that this is a wonderful opportunity for both my and your bakery, and I hope you consider it.

Hi buddy! I'm 12, and I live in Tulsa OK. I'm moving back to my hometown soon though, which is Las Vegas. I was diagnosed with type 1 diabetes 2 years ago, and 1 year later, I was diagnosed with celiac disease. This means I can't have even the tiniest bit of wheat, oats, barley, or rye. I LOVE your baking show and all your cakes, and I am inspired by you so much! I am really taking into thought of opening a completely, 100% gluten free bakery. (Gluten is wheat, oats, barley and rye). So I was thinking that maybe you could make a gluten free cake option for celiacs like me? I think it would be great to do this, and lots of people would try it. I would ABSOLUTELY buy it and try it! Sorry this is so long, but I love all your cakes and I hope you can try and make this happen!

I am such a big fan of yours and i watch your shows all the time i love to bake myself and and i am quiet good at baking myself. however i would love to fly new york and work with you so you can help with some tips and teach me the art of baking and decorating these amazing cakes that you do. This would honestly be my dream come true as this is what i love to do and would love to hear back from you. hope to hear from you.

My niece is graduating from Kindergarten on May 22nd and she is one of your BIGGEST fans! We signed up to bring a cake for the class and of course the only cake she wants is one made by you. WELL, since we are in FL that is a little hard to do and we have gone into several stores to find one large enough for her class, that to has been difficult. I'm not sure if this a shot in the dark or I am writing to the correct address, but we need help getting YOUR cake to her class. If there is any way you can offer assistance I would greatly appreciate it.

Do you know of anyone in or around Toledo Ohio that can make special cakes. I know it is out of the question to ask you wish it wasn't but it is. We are having our 50th class reunion in May and I thought if someone could make a replica of our school it would be neat. Do you know anyone that can do that besides you and doesn't cost a arm and leg. Thank you for taking the time to read this.

Hi Buddy! I have recently started baking more and decided to try to make my own frosting. The problem I'm running into is a gritty texture. I just can't seem to get rid of it no matter what I do. I've sifted my powdered sugar, melted the butter first, used a whisk attachment on my blender, tried mixing by hand, all to no avail. I would love if you could help. Thanks! Melissa Gant

My name is Anya and i love your show. My dream is to work at Carlos Bakery! Every time i watch your show i imagine me standing next to you designing a cake. What you do is amazing and to prove how much i love your show i will tell you this, i watch episodes of your show over and over! I will see you in about 3 years so you can make me my sweet 16 cake! well either that or i will already be working there! By the way how old do i have to be to work at Carlos Bakery? Hi buddy Im 11 and I watch your show cake boss,and the cakes you make are amazing!but the only problem is that I can never taste them I live in England ,London and would love if you and your family could try to start a Carlos bakery in England whenever I watch the show I dream about tasting the wonderful cakes and pastries you make and maybe one day even work at your bakery !!!!!! I'm a 16 year old girl from England and I am studying food at school for one my GCSES. For our exam we were given countries and we had to cook food from our given country, we have to make a main course and a dessert, I was given Italy and do not know of any desserts that I could make, as we are only given an hour to cook, I just don't know what I can cook and I was wondering of you know of anything that I could make. It would really make my day if you had any ideas of what I could make, thank you for your help in advance.

¡Hola! Buddy I'm like one of your biggest fan and I've been baking since I was 12 and I bought over $200 worth of supplies because when I watch your show it inspires me to do what I love doing. I've googled everything to help me smooth a cake to where it looks like it's been covered in fondant. Nothing helped so I turn to the expert of frosting a excellent smooth cake. Is there any tips or directions what I can do to frost a cake that smooth?

I want to open my own bakery and I was wondering if most bakeries make there own icing or do they get it from different suppliers and do they get there fondant from a suppliers or make it on there own???

I know that I am only 13 years old, but I REALLY like decorating cakes. Since i was little my mom has always decorated and made cakes. This year i decided that i will take cake classes (Wilton Cake Classes) and oh my gosh i Love it! unfortunately I couldn't finish all 4 lessons i only finished 3. hello Buddy, I hope you do ready this comments, I sent you a request a few months ago. my daugher Jazmin is a huge fan of yours she is 14 and will be 15 on May of this year, one of her most dreams are to be able to bake and decorate cakes just like you, she is very passionate about baking. We are having a cottillion on June 204 and per my letter back then I will love for her to receive a cake from your bakery at least a little one with a note from you, trust me that will top over everything prepared and presented that day. that will be like a dream come true, please email me, what can you do for this little's girl dream, we are not rich but I am hoping for her dream to come true that day.
will be just amazing for her.

My wife & I live in a little unincorporated-town in upper N.E. TN called Roan Mountain that adjoins Elk Park, NC. My wife & I met in college & married a few years later (She came from Brunswick, MD, with a proper Northern accent & at that point only went to church 1 time in her life whereas I had lived in TN with a strong Southern accent & had been a born again Christian with Southern chivalry all of my life.
There is a really nice state park here with 5 star 2-story cabins, tent sights, R.V. hook-ups, outdoor pool, tennis court, with literally hundreds of wild deer in the park that you can come within 3 feet of before they run. This town has 36 churches: 19 Free-will Baptist, 6 Missionary Baptist, 2 Presbyterian, 2 Christian, 2 Church of Christ, 2 Methodist, 1 Adventist, 1 Church of God & 1 Holiness & is located at the geographical center of what is known as “the bible belt”.
Buddy, my wife & I watch cake boss all the time & after that hurricane hit near you I had no doubt that God was going to bring your company back stronger than before; You see, when I was 14 back in 1983 I had a brain tumor, had 3 major surgeries, lost down to 53 pounds & given a 10% chance of living. At that point I had pretty much gave up on life until my football coach told me something that I apply every day since, he said a winner never quits & a quitter never wins. This partial list of miracles really did happen: they are filmed, documented, been seen in 14 countries & 42 states (All major surgeries are filmed for 2 major reasons: 1 = for proceeding doctors can learn from in different locations; 2 = In case of lawsuits.) I spent 55 days in the hospital. Took off of feeding tubes, all medicine & fully release.2 months later I had a homebound teacher for 5 months (3 days/wk.6hrs./day) & made up ALL homework/tests missed. 3 months later I went back to school & graduated in 1987. Went to college & went on 2 mission trips with churches. (I honestly did want to go to NJ to help but without the ability to drive (vertical vision) NJ would’ve been a pretty good walk & I don’t think my wife would’ve approved anyway! (LOL)
Buddy, years ago I wrote a very detailed Testimony from the 18 pages of original medical papers I obtained from the hospital & called it “A Testimony of God’s Love” by Brian McMahan at atestimonyofgodslove.blogspot.com

I Am honestly a huge fan of your work in expertise. I saw you at the Hanover theater a few years ago. I even went to New York City to see your bakery in time square. It was amazing and your sweets were great!!!!!! You are honestly a true role model to me. Hey Buddy I'm Bella and I am 11 years old. I just love your all your show. I have watch all 7 seasons at least two times. I am different from the other kids because well they are asking for a doll or a toy race car all I asked for was cake mix, icing , fondant a mixer and I think my mom got the book the I asked for that is about cakes and u r on the cover!! My family goes on a snow boarding trip every year but this year I asked my mom if we could go to Hoboken to see u but she said "no" but there's always next year!! Thanks for reading this !! Bye
